Carbonating in a corny keg: pressure by temperature
How to set your regulator for the right carbonation for each style, with a quick-reference table.
· 5 min read
Carbonation is measured in volumes of CO2. Lagers and IPAs sit around 2.4–2.6 vol, nitro stouts far lower, German wheat beers up to 3.5 vol.
Quick reference (psi)
| Fridge temp | 2.2 vol | 2.5 vol | 2.8 vol |
|---|---|---|---|
| 2 °C | 8 | 10 | 12.5 |
| 4 °C | 9.5 | 11.5 | 14 |
| 6 °C | 11 | 13 | 16 |
Rounded reference values. Hold at set pressure for at least 5–7 days before serving.
Steps
- Chill the keg to serving temperature.
- Set the regulator from the table and open the gas.
- Purge the lid relief 2–3 times to clear headspace oxygen.
- Wait 5–7 days, pour, and adjust 1 psi at a time.
